A good mistake is hard to find. It should be celebrated with bread and cheese and wine. For this is a meal that knows about failure and waiting and being punched in the gut. Yet it rises and ages and cures with time.

Slice up the baguette, pull out the Brie, uncork the Cab; we'll have a soirée. A good mistake deserves bread and cheese and wine.
